Vegetable Soup Recipe

‘Tis the season for healthy comfort foods and you could say that we are thrilled! One of our favorite winter comfort foods is soup. Not only a way to warm up our bodies during the winter chill, soup is also an incredible food that can provide tons of nutrients and vitamins that’s especially needed during the colder months. Plus, it’s really easy to make! One of our go-to soup recipes is actually a simple vegetable soup that’s packed with spinach, celery, carrots, bone broth and more – making it the ultimate winter soup recipe. You can also add beans and pasta to make this dish more of a meal, or eat as is for a hearty dose of veggies. Read on to check out our recipe that we are going to be slurping up all winter long.

Vegetable Soup Recipe

Ingredients:

1 carton of chicken bone broth or veggie broth
1 can of whole organic tomatoes
2 parsnips, cut up
stalk of celery, cut up
2 carrots, cut up
1 squash, cut up
1/2 onion, cut up
1 clove of garlic, minced
1 head of broccoli, cut up
1 head of spinach, cut up
1 can of chickpeas, washed and drained
1 package of whole wheat pasta, optional
dash of basil flakes
dash of dill flakes
dash of tumeric
salt and pepper

Directions:

Pour the broth into a large pot and boil on a low heat. Chop up the onions, carrots, parsnips, celery, squash, and garlic and place them in the pot. Add in the tomatoes, tumeric, basil, dill and salt and pepper. Let the soup cook as you check on it periodically. Add in the spinach and broccoli and stir. If you’re adding in some pasta, boil a separate pot of water and cook the pasta as directed. Taste your soup and add more salt and pepper as needed. Enjoy!
